Measurement of dry cured ham with the RFQ-Scan TDR technology In a long-lasting cooperation with the Spanish research institute CENTA/IRTA a module to measure the salt and water content as well as the water activity in Serrano Ham was developed. The acquired expertise from the work finally was transferred into a commercial product. The novel quick measurement method will be a valuable cost-saving alternative to existing methods, such as for example near-infrared (NIR) or traditional salt meters for most ham products.
